Heat oil in a frying pan or wok . Stir-fry the onions and ginger.
Add mushrooms and mixed vegetables. Stir-fry for 2 minutes or until the vegetables are cooked.
Next, add the noodles and sliced egg. Keep stir-frying until the noodles are warm then stir through all the seasonings from the sachet. Remove from heat.
Serve hot and garnish with spring onions.
